When you have some leftover, what do you do with it?

  • Do you throw it away?
  • Do you eat it as it is (or reheated)?
  • Or do you turn it into something else?

There is a Japanese proverb ”残り物には福がある”。 It means “Last, but not least”, “Sometimes lees are better than wine”, and my favorite, ”Leftovers bring you good luck”. It’s not just about food, but other things in general.

Sometimes “leftover” has negative connotations, but for me, leftover food is worth the weight of gold.

  • “I eat all of my pizza leftover the next day, save everything else, but normally end up moldy, so throw them away.”

I have worked hard to try to adapt recipes that cannot be repurposed so that we do not have leftovers, but things like pot roast, roast chicken, roasted vegitables……all get repurposed, for example roasted eggplant, zucchini and tomatoes become a chunky topping for cream cheese topped bread or bagels for lunch the next few days.

We try hard not to waste food, and often i freeze cooked corn, meat, soup and use it at a later date…..soups sometimes have corn meal and egg added to become corn cakes or patties, we joke soup patties! especially good with corn chowder and leek and potato soup!

My fave thing to do w/ a lot of stuff is to throw it into an omelet or egg scramble for breakfast. Yum!
